Description

Delicious cookies that blend the warm, cozy flavors of chai tea with the comfort of freshly baked treats, perfect for sharing with friends or enjoying with tea.


Ingredients

  • 18 TBSP Unsalted butter (1 cup plus 2 tbsp)
  • 2 2/3 cups All-purpose flour
  • 1 TBSP Cornstarch
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 1/4 tsp Ground nutmeg
  • 1/2 tsp Cardamom
  • 1/4 tsp Ground cloves
  • 1 1/2 cups White granulated sugar
  • 2 Large eggs (room temperature)
  • 1 tsp Pure vanilla extract
  • 1/2 cup White granulated sugar (for rolling)
  • 1 tsp Ground cinnamon (for rolling)
  • 1/2 tsp Ground ginger (for rolling)
  • 1/4 tsp Ground nutmeg (for rolling)
  • 1/4 tsp Cardamom (for rolling)
  • 1/4 tsp Ground cloves (for rolling)

Instructions

  1. In a large frying pan, melt the butter. Cook until milk solids separate and turn amber.
  2. Pour the melted butter into a bowl and let it cool for about 40 minutes.
  3. Sift together flour, cornstarch, baking soda, salt, cinnamon, ginger, nutmeg, cardamom, and cloves in a medium bowl. Set aside.
  4. In a large mixing bowl, combine the cooled brown butter, sugar, eggs, and vanilla. Whisk until well mixed.
  5. Add the dry ingredients to the wet mixture and mix until combined into a thick dough.
  6. Preheat your oven to 350℉ (175℃) and line two cookie sheets with parchment paper.
  7. Let the dough rest for 10 minutes.
  8. Mix together sugar, cinnamon, ginger, nutmeg, cardamom, and cloves for rolling.
  9. Use a cookie scoop to roll each ball of dough in the chai sugar mixture.
  10. Place 6 cookie dough balls on each cookie sheet and bake for 13-15 minutes until edges are lightly golden.
  11. Let cookies sit on the hot pan for 6 minutes before rolling tops in chai sugar again. Move to a wire rack to cool completely.

Notes

For a unique twist, add chocolate chips, nuts, or dried fruits. Store cookies in an airtight container for up to a week or freeze for up to three months.
