Ingredients

  • 8 oz pasta (penne or rigatoni)
  • 1 lb Cajun sausage (sliced)
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced Cajun sausage and cook until browned.
  3. Stir in the chopped onion, garlic, and bell pepper; sauté until softened.
  4. Mix in the diced tomatoes, heavy cream, and Cajun seasoning. Cook for a few minutes until combined.
  5. Add the pasta and enough water to cover it. Bring everything to a boil.
  6. Reduce the heat, cover, and let it simmer until the pasta is cooked, stirring occasionally.
  7. Stir in the shredded cheese until melted and smooth. Season with salt and pepper to taste, garnish with fresh parsley, and serve hot.

Notes

For variations, swap the sausage for andouille or smoked sausage, add fresh spinach or kale, or toss in some red pepper flakes for extra heat.
