A flavorful blend of sweet brown sugar, savory chicken, and fresh pineapple, this dish is perfect for family dinners or impressing guests.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup brown sugar, packed
- 1 cup fresh pineapple chunks (or canned)
- ½ cup soy sauce
- ¼ cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Chopped fresh cilantro (for garnish)
Instructions
- Season the Chicken: Sprinkle salt and pepper on the chicken breasts.
- Heat the Oil: In a large skillet or frying pan, warm the vegetable oil over medium-high heat.
- Sear the Chicken: Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
- Prepare the Sauce: In the same skillet, combine the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Stir well to blend.
- Add Pineapple: Stir in the pineapple chunks and mix into the sauce.
- Return Chicken: Place the chicken back into the skillet, ensuring it’s well-coated in the sauce.
- Simmer: Lower the heat, cover, and let it simmer for about 20-25 minutes until the chicken is cooked through.
- Check Doneness: Confirm the chicken’s internal temperature reaches 165°F (75°C).
- Garnish and Serve: Once cooked, top with chopped fresh cilantro and serve it on a platter, drizzling extra sauce over the chicken.
Notes
For optimal flavor, use fresh ingredients and consider marinating the chicken for 30 minutes before cooking.
