Ingredients

  • Tortillas
  • Eggs
  • Milk
  • Flour

  • Salt
  • Pepper

Instructions

  1. In a skillet, brown the breakfast sausage until fully cooked. Drain any excess fat.
  2. Whisk eggs in a bowl, add salt and pepper, then pour them into the skillet with the sausage. Stir until the eggs are fluffy and scrambled.
  3. Warm tortillas lightly in the microwave or on a skillet to make them pliable.
  4. Spoon the sausage and egg mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. In a saucepan, melt butter. Stir in flour to create a roux, then gradually whisk in milk until smooth. Season with salt and pepper to taste.
  6. Pour the gravy over the rolled tortillas in the baking dish.
  7. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until set.

Notes

For extra flavor, add diced jalapeños or bell peppers to the sausage. Make the filling and gravy a day in advance for easy preparation.
