Ingredients
- Breakfast sausage
- Tortillas
- Eggs
- Milk
- Flour
- Butter

Instructions
- In a skillet, brown the breakfast sausage until fully cooked. Drain any excess fat.
- Whisk eggs in a bowl, add salt and pepper, then pour them into the skillet with the sausage. Stir until the eggs are fluffy and scrambled.
- Warm tortillas lightly in the microwave or on a skillet to make them pliable.
- Spoon the sausage and egg mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
- In a saucepan, melt butter. Stir in flour to create a roux, then gradually whisk in milk until smooth. Season with salt and pepper to taste.
- Pour the gravy over the rolled tortillas in the baking dish.
- Preheat oven to 350°F (175°C) and bake for 20-25 minutes until set.
Notes
For extra flavor, add diced jalapeños or bell peppers to the sausage. Make the filling and gravy a day in advance for easy preparation.
