- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate ganache
- 1/2 cup pastry cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of cookie dough onto the prepared baking sheet and flatten them slightly.
- Bake for about 10-12 minutes, or until the edges are golden. Allow cooling completely.
- Once cooled, sandwich a dollop of pastry cream between two cookies and dip the tops in chocolate ganache.
- Let the chocolate set before serving.

Store in an airtight container for up to 3 days or freeze before adding ganache for up to 3 months.
