Ingredients

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate ganache
  • 1/2 cup pastry cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized balls of cookie dough onto the prepared baking sheet and flatten them slightly.
  6. Bake for about 10-12 minutes, or until the edges are golden. Allow cooling completely.
  7. Once cooled, sandwich a dollop of pastry cream between two cookies and dip the tops in chocolate ganache.
  8. Let the chocolate set before serving.
