Description
Satisfying BBQ Chicken Quesadillas combining tender chicken and zesty barbecue sauce, all stuffed between crispy tortillas and gooey cheese.

- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 2 tablespoons olive oil
Instructions
- In a bowl, mix the cooked shredded chicken with barbecue sauce until well coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over it.
- Spread 1/2 cup of the BBQ chicken mixture evenly on top of the cheese, then layer with another 1/2 cup of cheese.
- Cover with a second tortilla; cook for 3-4 minutes until the bottom is golden and the cheese begins to melt.
- Carefully flip the quesadilla, cooking for another 3-4 minutes until golden and the cheese has fully melted.
- Remove from the skillet and repeat with the remaining tortillas and filling.
- Slice into wedges, garnish with chopped green onions if desired, and serve warm.
Notes
For a spicy kick, swap cheddar for pepper jack. Can use corn tortillas for gluten-free option.
