  • 2 teaspoons active dry yeast
  • 1 cup whole milk (or almond milk)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Activate yeast by combining warm milk, sugar, and yeast in a bowl. Let sit until frothy.
  2. In a larger mixing bowl, combine flour and a pinch of salt.
  3. Pour activated yeast mixture and vanilla into the flour mixture. Mix until a dough forms.
  4. Knead dough for about 5-8 minutes until smooth and elastic.
  5. Cover the dough and let it rise in a warm area for 1-2 hours or until doubled in size.
  6. Once risen, roll out the dough to about half an inch thick and cut into squares.
  7. Heat oil in a deep pot, and fry beignet squares until golden brown on both sides.
  8. Remove from oil and let drain on paper towels. Dust with powdered sugar before serving.
