- 4 large eggs
- 1 cup cherry tomatoes
- 2 cups fresh spinach
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- In a suitable baking dish, place the feta cheese in the center. Surround it with cherry tomatoes and fresh spinach.
- Drizzle olive oil over the veggies and feta, and season with salt and pepper.
- Create small wells in the spinach for the eggs.
- Carefully crack the eggs into the wells.
- Bake in the preheated oven for 20-25 minutes, or until eggs are set to your liking.
- Optional: Garnish with freshly chopped herbs before serving.
Notes
Serve with crusty bread for dipping or a fresh garden salad. Leftovers can be refrigerated for 3-4 days and reheated in the oven.
