Description

This Baked Cream Cheese Chicken features tender chicken breasts in a creamy, flavorful sauce, perfect for any night of the week.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 8 oz cream cheese (softened)
  • 1 tbsp fresh chives (chopped)
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or a drizzle of olive oil.
  2. Season the chicken breasts generously with salt, pepper, and paprika on both sides.
  3. In a skillet over medium heat, add the olive oil and sear the chicken breasts for 2-3 minutes on each side until they are golden brown. Once done, remove them from the skillet and set aside.
  4. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until it’s fragrant. Next, stir in the chicken broth and let it simmer for 1-2 minutes to reduce slightly.
  5. Lower the heat and add the softened cream cheese to the skillet, stirring until everything is well combined and smooth. Mix in the fresh chives, and season with salt and pepper to taste.
  6. Now, place the seared chicken breasts in the prepared baking dish. Pour the creamy mixture over the chicken, ensuring it’s well coated. If you like, sprinkle cheddar cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). If you’ve added cheese, broil for the last 2-3 minutes to achieve a lovely golden topping.
  8. Garnish with fresh parsley and serve warm with your favorite side dishes.

Notes

This dish can be easily adapted for turkey or tofu for a vegetarian version. Serve with steamed vegetables, rice, or a side salad for a complete meal.
