Instructions
- In a large mixing bowl, combine the mashed potatoes, flour, baking powder, salt, and black pepper (if using). Mix until a dough forms.
- Turn the dough out onto a floured work surface and knead gently for about a minute until it feels smooth.
- Divide the dough into two equal portions and shape each into a round disc about ½ inch thick.
- Cut each disc into four wedges, giving you the iconic farl shape.
- Heat a large skillet or griddle over medium heat and add the softened butter.
- Once melted and sizzling, place the potato farls in the pan and cook each side for about 4-5 minutes or until golden brown and crispy.
- Remove from skillet and let cool slightly on a paper towel. Serve warm, garnished with chopped herbs if desired.
Notes
For the best results, use starchy potatoes like russets or Yukon golds. Fresh herbs can elevate flavor and presentation.
