- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and apple cider, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in the diced apples with a spatula.
- Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely before drizzling them with the apple cider glaze.
Notes
For a more complex flavor, use a mix of different apples. Store cookies in an airtight container at room temperature for up to a week.
